Trainee Bakery Manager – Pick n Pay

As a Trainee Bakery Manager, you will oversee bakery operations to maximise sales while minimising shortages, ensuring adherence to company standards and policies.

Minimum Requirements

  • Grade 12/Matric
  • NQF 3 Bakery qualification (preferred)
  • Minimum 3 years’ experience as a Baker or Bakery Supervisor
  • Flexibility to transfer between stores as needed

Key Responsibilities

Merchandising Management

  • Conduct regular quality checks on bakery products
  • Execute plano guide fully
  • Handle products as per SOP
  • Ensure all items meet recipe specifications
  • Prepare department for trade before store opening
  • Identify top-selling items and sales opportunities
  • Maintain proper wrapping, packing, and stock levels
  • Monitor hygiene, safety, and housekeeping standards
  • Follow promotional calendar and stock rotation guidelines

Food Safety & Hygiene

  • Maintain strict hygiene and housekeeping standards
  • Rotate stock to ensure freshness
  • Uphold food safety and health regulations
  • Address non-conformances with corrective action
  • Implement and verify cleaning schedules
  • Complete Food Safety Daily Checklist

Customer Service Management

  • Respond to customer inquiries promptly
  • Provide alternatives for out-of-stock items
  • Ensure bakery equipment is functional and manned

Staff Management

  • Communicate key updates to the team
  • Delegate tasks and set priorities
  • Address policy or procedural non-compliance
  • Attend and relay regional meeting updates
  • Manage staff scheduling and provide coaching

Administration

  • Maintain equipment in working condition
  • Monitor waste and implement reduction measures
  • Track sales performance and identify growth opportunities
  • Ensure accurate shelf labeling (SEL)

Systems Management

  • Log and report out-of-stock items
  • Process IDTs and waste via SAP
  • Review electronic communications regularly
  • Conduct stock counts per company guidelines
