Food & Beverage Floor Manager
Job Purpose
Responsible for the effective day-to-day management of beverage operations and service, ensuring profitability, operational excellence, and customer satisfaction while aligning with Sun International’s F&B strategy.
Key Performance Areas
Business Plan Implementation
- Develop outlet objectives in line with F&B strategy.
- Communicate and implement F&B deliverables.
- Conduct risk assessments to safeguard profit margins.
- Delegate authority and allocate resources efficiently.
- Align strategies with EE, SD, and BBBEE targets.
Shift Management
- Optimize staff scheduling and duty allocations.
- Conduct shift briefings and handovers.
- Oversee floor operations, addressing guest requests and complaints.
- Ensure staff appearance and equipment functionality.
- Manage stock control and cash handling per SOPs.
- Complete shift reports accurately.
Product Enhancement
- Analyze competitor offerings and pricing.
- Evaluate product performance and recommend improvements.
- Drive new product initiatives and measure ROI.
F&B Standards & Governance
- Enforce beverage standards and legislative compliance (health, safety, hygiene).
- Mitigate financial risks through controls and audits.
- Conduct weekly walkabouts to monitor compliance.
- Promote waste management and collaborate with internal stakeholders.
People Management & Development
- Manage attendance, productivity, and payroll costs.
- Identify training needs and provide coaching.
- Oversee employee relations and performance reviews.
- Recruit, onboard, and develop talent.
Financial Management
- Assist in budget forecasting and Capex planning.
- Monitor COS reports, recipes, and procurement pricing.
- Conduct stock takes to minimize variances.
Customer Relationship Management
- Enhance guest experiences through VIP engagement.
- Address complaints and uphold service standards.
- Support events and ensure management visibility in outlets.
Stakeholder Relationship Management
- Attend meetings and share operational updates.
- Align internal/external service providers with SLAs.
- Report performance metrics to management.
Education
- 3-year Hotel School Diploma or equivalent qualification.
Experience
- 5–6 years in F&B, including 2 years in a supervisory role.
- Luxury hotel experience preferred.
Skills & Knowledge
- F&B costing, product knowledge, and specialty beverages (wine, barista).
- Team planning, operational management, and stock control.
- Intermediate computer skills (Micros/Opera preferred).
Work Conditions
- Flexibility to work shifts.
- Physically capable of moving equipment and working across outlets.
